Oven Fried Chicken
1 beaten egg
3 tablespoons milk
1 cup finely crushed saltine crackers, about 28
1 teaspoon dried thyme, crushed
1/2 teaspoon paprika
1/8 teaspoon pepper
2 1/2 to 3 pounds meaty chicken pieces
2 tablespoons margarine or butter, melted
Grease a 13 x 9 inch casserole with the melted butter. Mix egg with milk in a bowl. Mix saltines, thyme, paprika and pepper in another bowl. Dip chicken in egg mixture then dredge in saltine mixture. Shake off excess. Lay chicken pieces in casserole. Bake in a preheated 350F oven for 45 to 75 minutes, depending on chicken pieces used, until golden brown and crisp and juices run clear.
Serves 6. 6 points per serving.
