Banana Bread

1/2 cup flour
3 tablespoons sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
dash of salt
1/4 cup 30% less fat sour cream
1/4 cup mashed ripe banana
1 teaspoon vegetable oil
1/4 teaspoon vanilla extract
1 large egg white, lightly beaten
cooking spray

Preheat oven to 350F. Combine first 5 ingredients in a medium bowl; make a well in center of mixture. Combine sour cream and next 4 ingredients; stir well. Add to flour mixture, stirring just until moist. Spoon batter into a 6 x 3 x 2 inch loaf pan coated with cooking spray. Bake for 35 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes; remove from pan and let cool on a wire rack. Yield 1 loaf.

Serves 6. 2 points per serving.
