Vegan Beans and Rice
1 box instant brown rice
2 packages powdered chili or taco mix, fat free
1 package frozen corn kernels
2 to 4 cans of kidney, red, pinto, black beans, drained, any combination will work
1 to 2 16 ounce jars of salsa
1 jar of diced tomatoes, drained
Prepare brown rice according to directions. Bring to medium heat and add beans, corn kernels and diced tomatoes. Stir. Add powdered seasonings. Stir well. Add Salsa and mix well. Simmer from 2 to 5 minutes or until mixture thickens. While this can be served alone, it also goes great with corn chips, a baked potato, a small salad, greens and cornbread or yams. Serves 8 to 10.
