Tofu McVegan
1 package water packed extra firm tofu
2 packages commercial tofu scrambler mix
1 tablespoon olive oil
1 package vegetarian Canadian bacon or ham slices
8 English muffins
8 slices soy cheddar or American soy cheese
Remove tofu from package, press to remove extra water and set aside. Mix two packages of tofu scrambler mix with enough water to make a relatively thick sauce, similar to barbecue sauce or salad dressing. Cut tofu block into 8 slabs. Place tofu slabs and olive oil in a fry pan over medium heat. Baste slabs liberally with tofu scrambler sauce. Cook for several minutes then turn and baste the other side with sauce. Keep scraping the sauce from the bottom of the pan and basting the slabs with it until the sauce has dried up and is crusted on the outside of the tofu slabs. Remove from heat. Toast English muffins, place one slice of soy cheese, one slab of tofu and one slice of vegetarian ham on each; top with other half of English muffin and enjoy. Serves 8.
