Tasty Chili
1 cup textured soy protein
1 cup boiling water
1 28 ounces can diced tomatoes
1 3 ounce can tomato paste
3 tablespoons chili powder
1 large onion, diced
1 14 1/2 ounce can corn, undrained
1 14 1/2 ounce can fat free spicy refried beans
2 teaspoons cumin
2 teaspoons garlic powder
1 teaspoon dried oregano
1 15 ounce can kidney beans, undrained
Place the textured soy protein and the boiling water in a large pot. Let sit for 5 minutes. Add remaining ingredients except the kidney beans. Cook for 30 minutes. Add the kidney beans and cook an additional 30 minutes. Serves 8.
