Squash and Tofurky

1 acorn squash, cut into big bite sized chunks
1/2 cup chopped green onion
2 to 3 slices of smoked tofurky, diced
1 sprinkle of garlic powder
1 pinch of nutmeg
a little vegan margarine
some extra virgin olive oil
fresh cracked pepper and salt to taste

Heat margarine and olive oil in a pan. When the margarine is melted throw in the squash and onions. Sprinkle in the garlic and nutmeg. Season with salt and pepper. When the squash is almost tender throw in the diced tofurky. Cook until the squash is fork tender and slightly brown. Reseason with salt and pepper. Serves 1.
