1 tablespoon oil for sauteing the onions and garlic
1 onion
1 clove garlic, optional
handful mushrooms, optional
8 veggie sausages
1 can baked beans
1 can kidney beans, optional
1 can tomatoes, chopped
1 tablespoon tomato puree, optional
Halve the onion and then slice so that you have semi circle onion rings. In a large frying pan, saute them with the garlic until translucent. Add the sausages to the frying pan until they are nicely browned on the outside. Add the beans, tomatoes and tomato puree to the pan and hold at a fast simmer for about 15 to 20 minutes. The longer it simmers, the thicker the sauce becomes.
Serve over mashed potatoes. Serves 4.
