Gooey Summer Veggies
2 cups fresh corn
2 cups sliced zucchini
two large tomatoes, cut into chunks
1 cup silken tofu
2 cloves garlic, minced
1 teaspoon basil
salt and pepper to taste
Bring 1/2 cup salted water to a boil in a saucepan and add the corn. Cook for five minutes. Add the zucchini, tomatoes, garlic and basil and cook for another five minutes. Add the silken tofu last, stir and heat through. Serves 4.
