Fast and Simple Tofu and Beans
1/4 cup chopped firm tofu
16 ounce can vegetarian baked beans
2 tablespoons chopped onion
black pepper to taste
Place tofu, beans and onion in a microwave safe bowl. Heat on high for 4 minutes, covered, stirring halfway through cooking time. Remove from microwave. Season with pepper and serve. Serves 1.
