Pla Jian
Fish in Ginger Sauce

1 1/2 pounds whole fish such as red snapper
1 tablespoon cooking oil
2 cloves garlic, finely chopped
2 spring onions, cut into small pieces
1 tablespoon fresh ginger, finely chopped
1 1/2 tablespoons fish sauce
1 1/2 tablespoons sugar
1 cup water
1 tablespoon tamarind juice
1/2 teaspoon white pepper
1 tablespoon corn flour, mixed with a little cold water
1/4 pepper, finely sliced
1/2 small onion, sliced
4 sprigs fresh coriander, to garnish

Wash and trim the fish. Fry, grill or steam the whole fish. Set aside and keep warm. Heat oil in a wok. Add garlic, spring onions, ginger and sugar. Reduce heat and stir for about 3 minutes. Add water, tamarind juice, white pepper, turmeric and fish sauce. Stir in the corn flour. Add peppers and onions. Stir for about 2 minutes. Place fish on a serving plate. Pour sauce over fish. Garnish with coriander sprigs. Serve with steamed rice. Serves 4.
