Maui Onion Soup
1 pound Maui onions, sliced
2 tablespoons butter
1 quart beef stock or canned beef broth
1/4 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon bay leaf
1 1/2 tablespoons vinegar
1/2 cup white wine
salt and pepper to taste
Peel and slice onions. Saute in butter until lightly browned. Add beef stock, spices, vinegar and wine. Simmer gently 1 hour. Adjust seasoning.
