Rubbed and Roasted Salmon
1 salmon fillet
Rub:
1 tablespoon chile powder
1 tablespoon brown sugar
1 tablespoon white sugar
1 tablespoon garlic powder
1 teaspoon cayenne pepper
1 teaspoon kosher salt
1 teaspoon cinnamon
1 teaspoon ground thyme
1 teaspoon cardamom
1 teaspoon onion powder
1 teaspoon black pepper, freshly ground
Mix all ingredients together. Rub mixture over salmon; flesh side
only and let marinate about 30 minutes. Prepare a very hot grill
or heat oven to 400F. Lay fish over grill and cover. Do not
touch until salmon releases itself from grill; it will break if you
try to move it too early. If oven roasting, line a heavy baking
sheet with foil and roast until flaky. Remove from grill to serving
platter. Serve with Chipotle Aioli on crackers as an appetizer or
entree.
