Fried Crab Wontons
6 ounces crabmeat
4 ounces softened cream cheese
1/4 finely chopped red pepper
4 chopped water chestnuts
2 cloves minced garlic
1 scallion, minced
1/4 teaspoon black pepper
16 ounce package wonton wrappers
oil for frying
apricot sauce for dipping
Mix all ingredients except wrappers, oil and apricot sauce
together. Refrigerate one hour. Take one wrapper and brush edges
with water. Take 1 teaspoon of crab mix and place it in center of
wrapper careful not to get any on edges. Fold wrapper from one
corner to the opposite corner making a triangle. Press edges
tightly together. Fry in batches in deep hot oil just until brown.
Serve hot with apricot dipping sauce.
