Crumb Topped Alaska Cod
1 pound Alaska cod fillets, thawed if necessary
melted butter
1/4 cup fine dry bread crumbs
1 tablespoon chopped parsley
1/8 teaspoon each salt, pepper and paprika
lemon wedges
Cut cod into serving size pieces. Coat on all sides in about 3
tbsp. melted butter. Place in baking dish. Combine bread crumbs,
parsley, seasonings and 1 tbsp. melted butter. Sprinkle crumb
mixture over cod. Bake at 450F 8 to 10 minutes or until cod flakes
easily when tested with a fork. Serve with lemon wedges. Makes 4
servings. Recipe may be halved.
