Grilled Three Cheese Sandwiches
1 cup low fat cottage cheese, drained
1/2 cup shredded cheddar cheese, 2 ounces
1/4 cup chopped celery
2 tablespoons raisins
2 tablespoons grated Parmesan cheese
6 slices white or whole wheat bread
nonstick spray coating
In a blender container or food processor bowl blend or process cottage cheese till smooth. In a medium mixing bowl combine cottage cheese, cheddar cheese, celery, raisins and Parmesan cheese. Divide cheese mixture among three slices of the bread, spreading evenly. Top with the remaining bread. Spray a griddle or large skillet with nonstick spray coating. Preheat over medium heat. Add sandwiches and cook for 3 to 4 minutes or till cheese is melted, turning once to brown both sides. Makes 3 servings.
