Nutty Salsa
8 ounces roasted peanuts, without skin
1 red onion, chopped
1 tomato, chopped
1 green chile, chopped
1 tablespoon lemon juice
1 tablespoon coriander, chopped
salt to taste
Mix all ingredients together and season with salt to taste. Refrigerate until ready to use. Serve Salsa with tortilla chips or vegetable sticks.
