Mint and Caramelized Shallot Salsa

10 shallots, peeled and thinly sliced
1 tablespoon fresh ginger, grated
1/4 cup fresh mint, minced
1/2 cup minced fresh pineapple
2 tablespoons pineapple juice
1 teaspoon minced Thai red chiles or 1 1/2 teaspoons minced red serranos
3/4 teaspoon sugar
1 teaspoon soy sauce
2 tablespoon unseasoned rice wine vinegar

Saute shallots in water until browned, about 10 minutes. Cool. Mix with the remaining ingredients. Chill til serving.
