Spinach Grapefruit Salad
1 pound fresh spinach
1 small head radicchio, separated into leaves
2 tablespoons lemon juice
2 tablespoons vegetable oil
1 teaspoon sugar
1/2 teaspoon pepper
1/4 teaspoon paprika
1/8 teaspoon red pepper
2 cups peeled, cubed ripe papaya
2 large pink grapefruit, peeled and sectioned
2 medium oranges, peeled and sectioned
1/2 medium onion, sliced into thin rings
Remove stems from spinach. Wash and pat dry on paper towels. Tear into bite size pieces. Combine spinach and radicchio in a large bowl. Toss well. Combine lemon juice, oil, sugar, pepper, paprika, salt and red pepper in a jar. Cover and shake well. Add to spinach mixture, tossing gently. Add papaya, orange and onion. Toss to coat.
