Salade Verte avec Vinaigrette

salad greens of your choice
1/4 cup red wine vinegar
3/4 cup olive oil
chopped fresh parsley
salt and pepper
1 tablespoon minced shallot ,if desired
1 tablespoon dijon mustard, optional

Stir the mixture together, vinegar and herbs first and then slowly add the oil in a stream to help it emulsify somewhat and that's it. You can add croutons to the salad,but in France you most likely would eat it alone, maybe mopping up the remaining vinaigrette with your bread. Pour vinaigrette over greens.
