BLT Salad
1 head lettuce, shredded
1/2 pound mushrooms, trimmed and sliced
4 green onions, trimmed and chopped
3 tablespoons vegetable oil
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/8 teaspoon ground black pepper
4 tomatoes, cut into wedges
8 slices bacon, cooked and crumbled
Combine lettuce, mushroom and green onions in a mixing bowl; set aside. In a small bowl, combine oil, red wine vinegar, salt and pepper; mix well. Pour over salad and toss until well blended. Garnish with tomatoes and bacon. Serve immediately. Serves 6.
