Lemony New Potatoes
1 pound small new potatoes
1 teaspoon unsalted butter
1 teaspoon lemon zest, grated
1 tablespoon lemon juice
1 tablespoon chopped scallions
Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 12-15 minutes or until potatoes are tender. Drain and rinse under cold water to cool slightly. Melt butter in a heavy nonstick skillet over medium low heat. Add lemon zest, juice and chives. Add potatoes and stir until potatoes are coated with butter mixture and heated throughout. Season with salt and pepper to taste.
