Awabi Sakami

15 ounces canned or fresh abalone
2 1/2 tablespoons Sake
2 1/2 teaspoons soy sauce
4 ounces water
1 ounce sugar

Put the abalone into a small saucepan and add water. Bring to boil, reduce heat and simmer uncovered for 10 minutes. Add Sake and sugar and cook for another 5 minutes, stir in soy sauce and continue to cook for 2 to 3 more minutes. Cool to room temperature, cut the abalone into 1/2 inch thick slices and serve.
