Patate e Cipolle
Potatoes and Onions

2 1/2 pounds medium potatoes
1 pound white onions
1/4 cup extra virgin olive oil
1 teaspoon salt
pinch of pepper
2 cups water

Slice the onions 1/2 inch thick. Peel the potatoes and cut them in quarters. Heat up a large nonstick pan with the olive oil and when it's hot add the onions. Saute them for about 10 minutes. Add the potatoes and cook them for about 1 hour or until soft, stirring often. When they get too dry add some water a little at a time. The potatoes are ready when they're soft and the onions are creamy. Serve them hot. They're also good when they're cold. Serves 4 to 6.
