Pane all 'olio
Olive Oil Bread of the North
1 package yeast
1 1/2 cup warm water
1/2 cup olive oil
3 teaspoons salt
2 1/2 cups all purpose unbleached white flour
1 cup whole wheat flour
cornmeal for baking
Combine yeast, water, oil and salt. Mix well in a large bowl and let sit for 10 minutes. Slowly add the flours and mix well until a pliable dough is formed. Turn dough out onto a floured surface and knead aggressively for 10 minutes. Place dough in a bowl and cover loosely. Allow to rise in a warm spot until double in bulk. Divide dough in half and form into oblong loaves. Place loaves on a baking sheet sprinkled with cornmeal. Cover loaves loosely with a towel and allow to rise until double in bulk. Preheat oven to 400F. Just before baking, slash tops of loaves and bake for 40 minutes or until golden.
