Pork Tenderloin with Basil Marinade
1 2 pound pork tenderloin
1/2 teaspoon ground ginger
1/2 medium onion, minced
3 large garlic cloves, minced
5 leaves fresh basil
4 sprigs fresh parsley
3 tablespoons soy sauce
2 tablespoons vegetable oil
Place all ingredients except pork in a glass dish and mix well. Slice tenderloin at an angle into 3/4 inch medallions and turn in marinade. Refrigerate overnight. Grill medallions for 3 to 5 minutes on each side, just until it's just done and still juicy. Can be grilled ahead of time and served cold or reheated.
