Whole Wheat Pancakes
1 1/2 cups whole wheat flour
1/2 cup crushed low sugar bran cereal
2 teaspoons baking soda
3/4 cup evaporated skim milk
2 eggs, beaten
1 tablespoon brown sugar
1 tablespoon canola oil
2 teaspoons vanilla
nonstick cooking spray
Combine all ingredients and mix until blended. Drop batter, 1/4 cup at a time, onto a hot griddle sprayed with nonstick cooking spray. cook until brown on both sides, turning once, about 5 to 6 minutes. Serve with jam or fruit if desired. Serves 6.
