Ham and Swiss Mini Quiche
3 large eggs
1/4 cup diced cooked ham
1/4 cup Swiss cheese, grated
2 tablespoons chopped green onions
1/8 teaspoon black pepper
6 mini quiche shells, frozen
Preheat the oven to 350F. In a medium sized bowl, beat together the eggs, ham, Swiss cheese, green onions and pepper. Place the quiche shells on a baking sheet and divide the egg mixture evenly between the quiche shells. Place the quiche shells in the oven and bake for 20 to 25 minutes or until firm and lightly browned on top. Remove the quiche shells from the oven and allow them to rest for 23 minutes before serving. 4 servings.
