Curried Chicken Salad
3 tablespoons chopped prepared mango chutney
2 tablespoons plain low fat yogurt
2 tablespoons fat free sour cream
1 teaspoon curry powder
2 cups diced cooked chicken
1 large tart apple, peeled, cored and diced
1/2 cup shredded carrot
Combine the chutney, yogurt, sour cream and curry powder in a medium bowl. Add the chicken, apple and carrot; mix well. Cover and chill at least 1 hour before serving for the flavors to blend. Serves 4.
