Butter Beans, Mostaccioli and Ham
1 1/2 cups frozen, thawed small butter beans
2 14 ounce cans reduced sodium fat free chicken broth
4 ounces mostaccioli
4 ounces lean reduced sodium ham, diced
1/2 2 ounce can anchovies, rinsed, drained, mashed
2 teaspoons garlic
1 small mild chili pepper, chopped
1/2 cup sliced scallions
1/4 cup grated Romano cheese
Combine beans, broth, mostaccioli, ham, anchovies and garlic in large saucepan. Heat to boiling; reduce heat and simmer, covered, until pasta is tender, about 7 minutes. Add remaining ingredients; cook 1 minute. 4 servings.
