Apple Raisin Bars

3/4 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
sugar substitute equal to 1/4 cup sugar
4 medium apples, unpeeled, coarsely grated
2 cups cold cooked rice
1/4 cup shredded dried coconut
1/4 cup raisins
2 eggs, beaten

In a large mixing bowl, mix flour with baking powder, cinnamon and sugar substitute. Mix in remaining ingredients. Pour into a 9 x 13 inch baking pan sprayed with nonstick spray and bake in a preheated 325F oven for 40 minutes. Makes 20 bars.
