Sweet Cajun Stew

1/2 pound round steak cut into 2 inch cubes
1 teaspoon olive oil
5 ounces beef broth
1/4 cup diced tomato, drained
1 small sweet potato, peeled and diced
1 stalk celery
1/3 cup onion
2/3 teaspoon Cajun seasoning
2 teaspoons cornstarch dissolved in 4 teaspoon warm water

In a skillet over medium high heat, heat oil until hot. Add beef and stir fry for 2 minutes or until outside is no longer pink. Do not overcook. Place in crockpot. In the same skillet, combine veggies and broth scraping the browned bits off of the bottom. Bring to a boil. Add veggies and broth mix to beef in crockpot. Cover, cook on low for 8 hours or high for 6. For thicker stew, add cornstarch mix, stirring occasionally for 1 to 2 minutes.
