Red Beans and Rice
1 bag dry red beans
1 ham bone
1 onion, chopped
water to cover
1/2 cup brown sugar
1/3 cup vinegar
1/2 cup salsa or to taste
cooked rice
Rinse red beans and place in large crockpot. Place in ham bone and one chopped onion. Cover with water and cook on low heat until meat is tender and falls off ham bone, 4 to 5 hours. Remove bone and add brown sugar and vinegar and salsa to taste. Serve over cooked rice.
