Red Beans
1 pound red kidney beans, soaked overnight in water
1 1/2 cups brown rice
16 ounces stewed tomatoes
1 ham hock, optional
1 teaspoon basil
1 teaspoon thyme
1 onion, chopped
2 garlic cloves or 1/4 teaspoon garlic powder
white pepper, to taste
salt to taste
1/2 cup white wine, optional
cayenne to taste, optional
Put everything in the crock pot at the same time, except for the rice. Turn on high for 4 hours, then on low for 6 hours. During the last 1 1/2 hour, put in the rice. The final ingredient is about 1/2 cup of white wine. Add cayenne to taste if desired.
