Lemon Red Potatoes
1 1/2 pounds medium sized red potatoes
1/4 cup water
2 tablespoons butter, melted
1 tablespoon lemon juice
3 tablespoons fresh chives, snipped
fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Cut a strip of peel from around the middle of each potato. Place potatoes and water in slowcooker. Cover. Cook on high 2 1/2 to 3 hours. Drain. Combine butter, lemon juice, chives, and parsley. Pour over potatoes. Toss to coat. Season with salt and pepper.
