Light Fresh Herb Marinated Chicken
1 cup white wine
1 tablespoon olive oil
1 clove garlic, crushed
2 bay leaves
6 green peppercorns, crushed
1/4 teaspoon kosher salt
1 teaspoon minced fresh thyme
2 teaspoons minced fresh rosemary
2 tablespoons chopped fresh basil
4 skinless boneless chicken breast halves
Combine all ingredients except chicken. Pour the mixture over the chicken and let marinate for 1 hour. Prepare the broiler or grill. Cook the chicken for 5 minutes, brush with the marinade, the turn and brush other side with the marinade. Continue to cook until done. 4 servings.
