Garlic Ginger Roasted Chicken
1/2 cup soy sauce
1/4 cup honey
1/4 cup any kind of vinegar
2 tablespoons chopped garlic
2 tablespoons chopped gingerroot
1 fresh whole chicken
Prepare a marinade using first 5 ingredients. Place your rinsed chicken in a zip lock bag and cover with marinade. Seal to exclude air so chicken is fully contacted by the marinade. Let marinate at least 8 hours or overnight for a more intense flavor. When ready to roast, place breast side down in a shallow pan. Roast about 20 to 25 minutes per pound, 350F. Baste with the marinade or pan juices every 15 minutes. Turn the chicken breast side up during the last half hour. Chicken should be a nice mahogany color when done. Keep a close eye on it though; the marinade can scorch a little with all that honey in it.
