Spicy Pork Casserole
10 ounce shoulder of pork
2 onions
1 tablespoon butter or margarine
1 1/2 teaspoon curry powder
1 teaspoon paprika
1/2 teaspoon ginger
1 teaspoon salt
1 leek
2 apples
1 cup water
Shred the meat and chop the onions. Fry meat and onions together in the fat in a pot or a frying pan. Add the spices, they can well sizzle in there with the meat. Rinse and shred the leek, peel and cut the apples in wedges and mix all into the pot. Dilute with water and boil, covered, on low heat for about 20 minutes. Serve with mashed potatoes or boiled rice and a salad. Serves 4.
