Sweet Potato Casserole
4 cups mashed sweet potatoes or use 4 1 pound cans of sweet potatoes
3/4 cup sugar
3/4 cup half and half cream
1/2 cup melted butter
1 1/4 teaspoons vanilla
Topping:
1/2 cup melted butter
1/2 cup flour
1 cup brown sugar
3/4 cups chopped pecans
Boil and mash sweet potatoes. Add the remaining casserole ingredients and combine. Put into a nonstick sprayed casserole dish. In a separate mixing bowl, combine the topping ingredients. Place the topping on top of the potatoes. Bake at 350F uncovered for about 30 minutes or until topping is crisp.
