Cajun Blackened Fish
6 fish, fillets, cut 1/2 inch thick, red fish, pompano, red snapper,
salmon steaks, etc
1 cup butter
Durkee® LePak® Cajun Seasoning
Heat a cast iron skillet over very high heat for about 10 minutes. The skillet must be super hot; white ash may appear on the bottom of the skillet. While skillet is heating, melt butter in a large, flat pan. Dip each fish fillet in melted butter. Generously sprinkle and rub Durkee® Louisiana Cajun Seasoning on both sides of fish. Place each fillet in hot skillet and cook until done. Serve immediately. Serves 6.
