Peanut Butter Breakfast Squares

1 large egg white
1 1/4 cup old fashioned rolled oats
1/4 cup honey
1/4 cup oat bran
1/4 cup natural creamy peanut butter
1/4 teaspoon cinnamon
1/2 teaspoon vanilla
1/2 cup raisins

Preheat oven to 350F. Coat an 8 inch square pan with nonstick cooking spray. Beat the egg white, honey, peanut butter and vanilla with an electric mixer until smooth. Add the oats, bran, and cinnamon and beat until well mixed. Stir the raisins into the batter. Spread the batter in the pan. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Cool in pan and then cut into 16 squares. Store in refrigerator.
