Ham and Potato Frittata
1 tablespoon oil
1/3 cup chopped onion
1 garlic clove, minced
1 1/2 cups chopped ham
1 1/2 cups chopped cooked potatoes
1/4 teaspoon black pepper
6 large eggs
3/4 cup shredded cheddar cheese
Cook onion and garlic with oil in oven proof 10 inch skillet 2 minutes over medium heat. Add ham, potatoes and pepper; continue cooking 2 to 3 minutes or until heated through. Pour in eggs; cook 5 to 6 minutes or until eggs are mostly set but still wet on top. Sprinkle with cheese. Place in heated broiler 2 minutes or until cheese is browned and eggs are set, or bake in oven heated to 370F for 10 minutes or until eggs are set.
