Dijon Eggs

2 cups of grated sharp Cheddar Cheese
1/4 cup butter
1 cup light cream
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons Dijon mustard
12 eggs, slightly beaten

Spread the cheese in a 13 x 9 x 2 baking dish and dot with butter. Combine the cream, salt, pepper, and mustard. Pour 1/2 of this mixture over the cheese. Pour the beaten eggs in the dish and add the remaining cream mixture. Bake in a preheated oven at 325F for 40 minutes or until set. This makes a light and fluffy dish. Serves 6 to 8 people.
