Zuchinni Bread
Combine:
3 cups grated zucchini
1 cup salad oil
1 1/2 cups sugar
3 eggs, beaten
1 teaspoon vanilla
Sift in and stir to blend:
3 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 teaspoon salt
1/2 teaspoon ginger
Add and beat 4 minutes:
1 cup chopped nuts
1 cup raisins
Place in greased loaf pan and bake 1 hour at 350F.
