Marinated Mushrooms
8 ounces button mushrooms
3 tablespoons lemon juice
1/2 cup oil
2 tablespoons chopped parsley
1/4 teaspoon salt
1/4 teaspoon tarragon
pepper
Wash mushrooms, remove stalks, slice thinly. Combine lemon juice, oil, salt, pepper, tarragon and chopped parsley in bowl. Mix well. Cover. Marinate mixture 4 hours or overnight.
