Italian Sausage Bites
1 tablespoon olive oil
1 onion, chopped
1 garlic clove, smashed and chopped
3/4 pound Italian sausage, sliced
14 ounce can tomato sauce
1 French baguette, sliced thick and toasted
1 cup grated Gruyere cheese
salt and pepper
few drops hot sauce
Heat oil in skillet over medium heat. Add onion and garlic; cook 4 minutes. Add sausage slices, season well and continue cooking 7 to 8 minutes. Pour in tomato sauce, correct seasoning and cook another 6 to 8 minutes. Transfer contents to food processor and blend. Spread mixture over slices of toasted bread and place on ovenproof platter. Top with cheese, sprinkle with hot sauce and broil in oven until bubbly and lightly browned. Serve at once. Makes 4 servings.
